Whipped Ricotta
Makes: 2 Cups
Ingredients
- 1 1/2 cups whole-milk ricotta, cold
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 cup extra-virgin olive oil
Instructions
Add the ricotta, salt, and pepper to the bowl of a food processor and pulse once or twice to blend.
With the motor running, add the olive oil in a stream until incorporated. Add more oil, salt, and/or pepper to taste if needed.
Transfer to an airtight container and store in the fridge.
