Whipped Ricotta

Whipped Ricotta
Ingredients
  • 1 1/2 cups whole-milk ricotta, cold
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/4 cup extra-virgin olive oil
Instructions
  1. Add the ricotta, salt, and pepper to the bowl of a food processor and pulse once or twice to blend.

  2. With the motor running, add the olive oil in a stream until incorporated. Add more oil, salt, and/or pepper to taste if needed.

  3. Transfer to an airtight container and store in the fridge.
