Peanut Sesame Noodles

- 1/2 cup smooth peanut butter
- 1/4 cup soy sauce
- 2 tbsp fresh ginger, peeled and coarsely chopped
- 1 clove garlic, smashed
- 2 tbsp red wine vinegar
- 1 1/2 tbsp sesame oil
- 2 tsp honey
- 1/2 tsp red pepper flakes
- 1 pound dried spaghetti
- 3 tbsp sesame seeds, toasted (for garnish)
- 2 scallions, green parts only, julienned into 1 1/2" strips (for garnish)
Instructions
Place peanut butter, soy sauce, ginger, garlic, vinegar, sesame oil, and honey in a blender. Purée until smooth, about 2 minutes. If dressing is too thick, stir in warm water, 1 tablespoon at a time, until dressing blends smoothly.
Push sauce through a fine-mesh sieve to remove any chunks, then stir in red pepper flakes.
Cook spaghetti in a pot of boiling salted water until it is al dente and strain. Rinse the noodles with cold water until cool.
Toss noodles with sauce and distribute among 4 bowls, topping with toasted sesame seeds and scallions.
