Peanut Sesame Noodles

Peanut Sesame Noodles
Ingredients
  • 1/2 cup smooth peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp fresh ginger, peeled and coarsely chopped
  • 1 clove garlic, smashed
  • 2 tbsp red wine vinegar
  • 1 1/2 tbsp sesame oil
  • 2 tsp honey
  • 1/2 tsp red pepper flakes
  • 1 pound dried spaghetti
  • 3 tbsp sesame seeds, toasted (for garnish)
  • 2 scallions, green parts only, julienned into 1 1/2" strips (for garnish)
Instructions
  1. Place peanut butter, soy sauce, ginger, garlic, vinegar, sesame oil, and honey in a blender. Purée until smooth, about 2 minutes. If dressing is too thick, stir in warm water, 1 tablespoon at a time, until dressing blends smoothly.

  2. Push sauce through a fine-mesh sieve to remove any chunks, then stir in red pepper flakes.

  3. Cook spaghetti in a pot of boiling salted water until it is al dente and strain. Rinse the noodles with cold water until cool.

  4. Toss noodles with sauce and distribute among 4 bowls, topping with toasted sesame seeds and scallions.
