Pickled Onions
Makes: 2 CupsIngredients
- 1 red onion, halved and sliced 1/8" thick
- 1 cup boiling water
- 1/2 cup apple cider vinegar
- 1 tbsp sugar
- 1 1/2 tsp kosher salt
Instructions
Pack onion slices into a heatproof, wide-mouthed glass pint jar.
Mix water, vinegar, sugar, and salt in a medium bowl, stirring until sugar and salt are dissolved.
Pour brine over onions to cover. Allow onions to sit at room temperature for 1 hour, then cover and refrigerate.
