Pickled Onions

Makes: 2 Cups
Pickled Onions
Ingredients
  • 1 red onion, halved and sliced 1/8" thick
  • 1 cup boiling water
  • 1/2 cup apple cider vinegar
  • 1 tbsp sugar
  • 1 1/2 tsp kosher salt
Instructions
  1. Pack onion slices into a heatproof, wide-mouthed glass pint jar.

  2. Mix water, vinegar, sugar, and salt in a medium bowl, stirring until sugar and salt are dissolved.

  3. Pour brine over onions to cover. Allow onions to sit at room temperature for 1 hour, then cover and refrigerate.
