Spiced Green Sauce
Makes: 1/2 CupIngredients
- 1/2 tsp cumin seeds
- 1/4 tsp coriander seeds
- 2 cardamom pods, husks removed
- 1 cup cilantro, lightly packed
- 1 cup parsley, lightly packed
- 1/4 cup olive oil
- 1 serrano chile, seeded & minced
- 1 garlic clove, minced
- 1 1/2 tsp lemon juice
- 1/2 tsp lemon zest
- pinch ground cloves
Instructions
Toast the cumin, coriander, and cardamom seeds in a small saucepan. Move to the bowl of a mortar and pestle and cool, then grind fine.
Mince the cilantro and parsley and combine in a medium bowl. Add spice mix, oil, chili, garlic, lemon juice and zest, cloves, and a pinch of salt and pepper to taste. Mix well and taste, adding salt, pepper, lemon juice, or oil as needed.
